Located in central Austin, Nori is a plant-based sushi restaurant that offers a unique and refreshing twist on traditional sushi. Whether you're a vegan foodie or just looking to switch things up, Nori has something to please every palate.

Let's start with the appetizers. The Tatume and Brussels sprouts were both delicious and beautifully presented. The Tatume, a dish made with roasted summer squash, lemon-corn aioli and shiso microgreens, had a subtle sweetness that paired well with the tangy ponzu sauce. The Brussels sprouts were crispy and coated in a mouth-watering sauce that made them disappear from our plate in record time.

Now, onto the sushi. The Volcano roll was a standout favorite, with its creamy avocado, spinach and sweet potato, topped with spicy mayo. unagi, chill sauce, Caviart and tempura onion flakes. The Shiitake roll, made with roasted shiitake mushrooms mix and tempura scallion crunch, topped with zucchini, miso caramel sauce and leek fries, was bursting with flavor. And last but not least, the Hearts of Palm roll was a refreshing surprise, with avocado, bibb lettuce and tomato, Caviart, spicy mayo and chili sauce on top. 

Finally, we finished with the Smores Fudge, a decadent and gooey dessert that brought a smile to our faces.  A chocolate truffle, pistachio crumble, surrounded by marshmallow cream and a side of fresh sliced strawberries. It was the perfect sweet ending to a delicious meal.

Overall, Nori is a must-try for anyone looking for a creative and tasty take on sushi. The service was attentive and friendly, the atmosphere was casual and inviting, and the food was simply outstanding. Plus, it's great to see a restaurant that caters to plant-based eaters without sacrificing flavor. I highly recommend giving Nori a try - you won't be disappointed!
